The dbunit-maven-plugin is deleting data and re-inserting it. You could create a new profile that overrides both the hibernate3 and dbunit executions so they don't execute at all. Or you could look at the configuration of the dbunit plugin and modify it's <skip> element so it only runs when you do something like -Ddbunit.active=true.
