Just to let you folks know what I discovered about this error [now that I know 
what the error is ;)].  I did some googling and I found some other people had 
very similar problems and they fixed it by removing:

  ${CATALINA_HOME}/common/endorsed/xml-apis.jar

This fixed my startup problem as well, however I did notice a new INFO message 
in the catalina*.log file that said "XML is not being validated".  Not sure if 
that is a problem or not, but there are no WARN's or anything worse in any of 
the log files now.

As a recap for those happen to find this thread useful:
To run an AppFuse application on a Java 6 JDK / Tomcat 5.5 / Ubuntu 7.10 server
  Setup the database on the server [be sure to update *both* instances of the 
password in jdbc.properties if your DB password is different between the server 
and development]
  Verify the $JAVA_HOME in /etc/default/tomat5.5
  Disable Tomcat security [at least until you get things working] in 
/etc/default/tomcat5.5
  Deploy your app using the Tomcat manager app

  If you have problems you may want to update the app log properties so you can 
see entires that are typically only sent to the console.  The reason for this 
is there is no console output [at least not that I can find].
  /var/lib/tomcat5.5/webapps/myappname/WEB-INF/classes/log4j.xml

I think that is everything I did that was useful...
