The stable build. Period. You don't want your students to struggle with bugs - missing features are OK, but unpredictable behavior isn't. We[1] have used ArgoUML for some years now, and it has fulfilled our needs. If you search the (dev) list, you'll see that our only problem has been the limited support for sequence diagrams. By the way, the answer to question in the subject is Yes, IMHO.
