Steve There is a thorn CactusNumerical/InterpToArray that can interpolate to individual points, points on a line, points on a surface, etc. If these points coincide with grid points, then the interpolation becomes trivial, and you see the respective grid point values. The interpolation results are stored in grid arrays that you can output.
