When using merge or update the camel olingo2 component wraps the entire json object with "d" object. This makes the request fail on Dynamics CRM 2011. In the apache olingo class org.apache.olingo.odata2.api.ep.EntityProviderWriteProperties it is possible to omit the wrapping. However, I don't see a way to set this flag from the camel-olingo component.
