I'm wondering if anyone is using Cocoon 2.1 in a Production environment and has any comments about its stability.
Very stable, though there are open bugs at bugzilla which you should review to see if any will affect you. Lots of people using it for production for quite a while (from cvs). Now that rc/beta phase is here and a final release is imminent the api is also stabilized (except for blocks marked as unstable) and its use in production will quickly ramp up.
