How to use stores for persistence

Hi all,

I would like to use store components for persistent storage.
What is the correct use of a store ?
 - instanciate a new store | declare a new store in the cocoon.xconf file ?
 - register it to the Janitor
If I use this.manager.lookup(Store.ROLE), this means that there is only one store shared 
with all the webapp, no ? And is there some "built-in" components that already use the store ?
