I think part of the beauty of Cocoon is that it doesn't force you into a specific way of doing things.
If the above works for you and matches your team's skills, why not?


OTOH, learning Woody will allow you to take advantage of the community's progress, bug fixes, examples, documentation, etc., which might bring a lot more to your team and will certainly make the initial learning curve worth the effort.
