Enrico, i tested the catalog entity resolver with versions 2.0.4 and 2.0.5-dev and 2.1.4-dev and everything is fine.
Are you sure that your remote xhtml file is "XHTML 1.0"? If it is "XHTML 1.1" instead, then Cocoon does not have those DTDs. So it would be getting them from the network unless you have configured a "local catalog" for them.
