I've got a generator that converts from word to OOo. You could create a transformer that used the same method to convert from OOo to word. But then need to be able to get your XML into OOo in the first place (again shuldn't be too hard, but requries some work).
Let me know if the generator code would be helpful to see how to use OOo as a server in this way.
