Finally I found it. (and hope that it was the right way to do it...)
1. Copy the cocoon.xconf from
core/cocoon-core/src/main/resources/org/apache/cocoon/
to /WEB-INF/cocoon/cocoon.my.xconf
2. Declare it in applicationContext.xml
<avalon:avalon loggingConfiguration="/WEB-INF/cocoon/log4j.xconf"
location="/WEB-INF/cocoon/cocoon.my.xconf" />
3. Add the datasource to this xconf.
