Does declaring the cache-key in the template make sense at all? And does it work at all?

If you want I could mail an extended jx generator we use at hippo,
which by default caches your jx (cachekey depends by default then on
src location of the generator and the parameters of the generator)

What about making this the default in Cocoon's JXTemplateGenerator? You can do a round-trip through flowscript calculating more complex things and reference them via flow-attr input module anyway.
