I have actually checked out the cxf-2.2.5 tag from subversion and modified the pom file to point to spring 3.0, and had no problems at all. I'm actually using it with the dosgi as well, so I build cxf-2.2.5, and then build dosgi from trunk with spring 3.0 and spring-dm 1.2.1, and everything works well.
