IIRC such exceptions should already be present in the server's (e.g., Tomcat or Weblogic, etc.) log files. There's fault handlers in both JAX-WS handlers and CXF interceptors in which you can log whatever additional data needed that should show up in the server logs as a result (http://www.jroller.com/gmazza/entry/jaxws_handler_tutorial, http://www.jroller.com/gmazza/entry/jaxwshandlers_to_cxfinterceptors). I would look in the CXF source code (find . -name "*Interceptor.java") for examples which log error messages.
