If you've found the Javadoc already, it's all that we have, and that may include many classes are are not yet documented (patches welcome :). There's no magical Javadoc we keep hidden someplace where all classes and methods are fully elaborated upon.

I'm not sure which "hello world" sample you're talking about (we probably have multiple in our guide). Can you work from these examples instead: http://svn.apache.org/viewvc/cxf/trunk/distribution/src/main/release/samples/ (available in the CXF download) ? That may provide the code you're looking for.
