OK, the stats do show up, AFTER a request has been made. However, I was correct in that client side monitoring isn't supported. JConsole does work on Mac, with a security warning, however. I initially missed setting the JVM parameters without which it was not able to connect. The Spring messages are normal in debug mode...it's just Spring looking for a default profile.
