Just look in the code of LoggingOutInterceptor:
----
        final OutputStream os = message.getContent(OutputStream.class);
        final Writer iowriter = message.getContent(Writer.class);
        if (os == null && iowriter == null) {
            return;
        }
----
While neither the Outputstream as the Writer are present as the
WSS4JStaxOutInterceptor replace them with an XMLStreamWriter instance.
Above code both return null such that nothing is logged.
