maybe the example 
http://dev.geoext.org/trunk/geoext/examples/feature-grid.html is of use 
for you:

If you define


var aSelectControlThatHasAHoverHandler = new 
OpenLayers.Control.SelectFeature(yourVectorLayer, {hover: true});


and

gridPanel = new Ext.grid.GridPanel({

   ...
   sm: new GeoExt.grid.FeatureSelectionModel({
selectControl: aSelectControlThatHasAHoverHandler
   })
});


You should be able to select features on hover and have them highlighted 
in a grid as well.

Untested.
