Yes, in Linux, you can choose to install the bits you want, and the package manager will generally handle the rest. However, to give you but one example, if you just install Writer and Calc without the Base module in Linux, then try and open the bibliography database that you can access via the Writer menu, LibreOffice will crash. On the Mac, I suppose you could just try deleting parts of the app bundle and see whether it still functions correctly. To do that, you'd have to right click or (Ctrl-Click) on the LibreOffice icon in the Applications folder, and then display the packet contents via the context menu that is displayed. This opens the packet up in a normal folder like view with sub-folders. One could always try and delete bits here and there, but I have absolutely no experience of this and of course it may result in a completely unusable application afterwards.
