Well after fiddling around deleting odd bits here and there and still getting no further, I decided to delete the whole LibreOffice user profile and then restart LibreOffice. It meant I had to re-install the mysql connector again, but at least this time around it worked !!! It is rather frustrating though that the user profile is still so fragile with respect to certain extensions.
