I must say I was not aware of Peppermint OS,

Peppermint OS is a cloud Linux distribution, and it tries to use
as much as possible web services.
I am not sure how you installed Peppermint OS (did you install on a
LiveCD or LiveUSB?);
you would normally use Google Docs here.
If you try another Linux distribution such as Ubuntu Linux 11.04 (from
http://www.ubuntu.com/ )
you get pre-installed LibreOffice 3.3.

Nevertheless, once you extracted the LibreOffice Linux archive,
enter the "libreoffice" directory, then the "program" subdirectory.
Finally, the program you need to run is "soffice" which allows to
select if you want to start Writer or Calc or Impress.
