I use the database software (command line Tools>SQL...) to set DEFAULT CURRENT_DATE. In the Base forms I use to not include the date field when I want the nothing but the current date/time. When I want a user editable date/time, I use to add a label like: "Date (default: today)" as a reminder that the form field is optional with the current date as default value.
