Of course you are free to send feature-request to LO developers (as Jean- Baptiste Faure pointed out). But in the meantime, you can use keyboard shortcut.
In Tools -> Customize -> Keyboard find keyboard shortcut of choice (think of something you can press with one hand (perhaps left, if you use mouse with your right hand)), in Category select "Format" and in Function find "Merge Cells" (or Merge and Center, if you prefer). Then click "Modify".
