Thanks to Brian Barker, using a replacement table to replace the Symbol font with the OpenSymbol font worked to make the bullet points correctly.
I don't mean to be too inquisitive, but does someone know why and how this is the solution, and could OpenSymbol be made the default so that compatibility with Word documents will be improved?
