I've not been following this but don't you just 
1.  set the default style, or one of the others to the font you want for one 
slideshow.  
2.  Then apply that style to the whole document.  
3.  Fiddle around correcting headings and stuff if any have gone wonky
4.  Save the 'document'/slideshow.

5.  Go through 1-4 for the next slideshow.

If you are not used to using styles then 3 might be a bit fiddly.  If you have 
used styles fairly properly then 3 might go through automatically.

including the font I want for this particular file, whenever I add text to
another slide, it does not remember what I've been using so I have to
'select all', then choose the font & color.

comments, I'd be glad to do some editing then send it back to you;
