The 3.5.7 is on it's 7th "Service Pack" so it's about as ultra stable
as it could get.  The 3.6.3 is very stable but not as much as the
3.5.7.  The 3.6.3's advantage is that it might have slightly better
compatibility with non-native formats such as the MS ones (plus some other new 
features).  

It's a balancing act.  Luckily you can't really go wrong now that the
3.6.3 is out.  It's only on it's 3rd "Service pack" but that does make it quite 
stable.  The main thing to note is that if they somehow manage to find any
problem with whichever you choose then you just give them the other one
as an easy fix.  

Errr, listen to them grumble and then look thoughtful and lean back. 
Then suddenly look inspired and lean forwards, perhaps tap your chin,
and say something like "Ahah, i DO have something we could try for that".  
Something like that.  I'm not great with people .
