Hi :) I think just do the Writer one. Forget about Impress, Draw, Math, Base and even Calc for now. Also don't worry about the more advanced stuff for Writer. The aim could be to keep it simple and point people to the official guides for more in-depth or advanced help http://wiki.documentfoundation.org/Documentation/Publications
Once you have got a few things on the wiki-page and Tim and others see roughly where you are heading then other people are more likely to join in. Follow the "Release early and release often" approach so that people have something that is imperfect to begin with but see it improve as they make comments about it. That's my 2pence worth anyway but i got distracted while writing so others have probably had a better idea.
