AutoCorrect normally operates as you type new text or modify existing text by typing. You control its behaviour at Tools | AutoCorrect Options... | Options | Replace dashes - where you can set it to operate as you [M]odify or [T]ype text.
When I save it as a doc file and then load it again I still have --.
Saving and reopening the document doesn't affect anything. (Oh, and I hope, as a declared new user, you will soon learn to use LibreOffice's default .odt format instead.)
If you wish to apply such changes to an existing text, you can use Format | AutoCorrect | Apply. Note that this affects only paragraphs with the Default paragraph style and it changes this paragraph style to "Text body" instead - so it won't work more than once unless you change the paragraph style back to Default. Note also that AutoCorrect makes other changes which you may not want. So it may be a good idea either to use Format | AutoCorrect | Apply and Edit Changes instead, which enables you to distinguish the changes you want and don't want, or to make these changes at an early stage in the treatment of any document, so that you can undo any unwanted effect manually.
