I use Writer 5.1.4.2 and in that version 'Default Fonts' are listed in Tools > Options > LibreOffice > Advanced > Expert Configuration > org.openoffice.VCL > Default Fonts > en There you will find a list of some 22 properties. I don't know which you need for form controls. In each case, the first font listed is the one that is used by default. I have recently edited LATIN_SPREADSHEET to change the default font in new spreadsheets but I repeat that I do not know what the property is that you need for form controls.
