Actually, this was by design at the 25.2 release (it is in the release
notes), and revised a bit at the upcoming 25.8 release.
If you don't like the Dark theme's light fg on dark bg appearance, you
are expected to download and install a new Appearance theme.
A link button 'Add more themes' to the theme extensions is present on
the Tools -> Options -> Appearance tab next to the list box showing
Automatic.
An 'Extensions: Color Themes' dialog will open. Select the 'Install'
button for "Light Application Colors"
The entry 'Light Application Colors' will then appear in the list box
below 'Automatic'. Select that and Apply OK out. LibreOffice will prompt
to restart.
This was refined further for 25.8 and the Light Application Color theme
will not be necessary, a 'Use white document background' checkbox is
provided and enabled by default.
