2.7.0 is quite old in Hop terms, but that shouldn't make a lot of difference in your pipeline. Did you check the MongoDB server logs? How long does it take to run your pipeline with the last hop (to MongoDB) disabled? If that runs in the 2 hours you expect, your MongoDB server is probably the bottleneck.
