I had the same issue. I've contacted customer support of my registrar to 
enquire about it and they said they didn't support IPv6 yet. I then asked 
them if that meant I would have to move all my domains to a different 
registrar if I wanted to register IPv6 nameservers and they replied that 
they'd ask their engineers if perhaps a manual change could be made just for 
me.

To cut a long story short, they came back to me a few hours later, said they 
had made some changes to their website, and would I please try again? Ever 
since I've been able to register IPv6 nameservers through their website; An 
unexpected but pleasant surprise. Their website is at 
http://www.bulkregister.com/ which I am not affiliated with in any other way 
than being a (happy) customer.
