I wonder, is there any way to retain that kernel in my openning list of kernels, despite further updates?

As long as it's the active kernel when you update, it will be kept.

It depends on how many kernels you want to retain in a list, but as soon as you have that many kernels installed the next kernel update will remove the oldest kernel. A search I did on the net indicated that |sudo dnf mark install kernel-5.10.23-200.fc33.x86_64 will mark the specified kernel as not removable, and grub menu generation should continue to include that kernel in the kernel list. A subsequent sudo dnf mark remove kernel-5.10.23-200.fc33.x86_64 or sudo dnf remove kernel-5.10.23-200.fc33.x86_64 should then remove the kernel when no longer required.|
