You can of course. But it is up to you to monitor. And using storage on different hosts will cause the VMs to be copied via scp which is pretty slow.
Another way to have a large storage is to remove other drives on the nodes (or use small drives in them) and then plug big capacity drives on the main NFS node. A better way to do it is to make the /var/lib/datastore/1/ folder on the sunstone as a NFS folder and then mount it all other hosts on the same location /var/lib/datastore/1/.
