Yes I can use 'hostPath/hostMount' and (I think) I understand what that
means and how to do so.
My point was that at this stage this is not such a big concern for me as
I'm trying to understand *how* to set up a HA environment as opposed to
actually needing to do so :-)

You can't use hostPath/hostMount storage? I take "ephemeral" to mean
"private to the container that will go away when the pod/container
goes away" i.e. not persistent. You can use local disk storage to
achieve persistence without using NFS.
