Thanks for your reply first of all.

I think that would be super useful and great if I could connect my custom
Grafana to Prometheus Operator. That would effectively solve our needs.

In addition to this I am trying to follow this
https://github.com/coreos/prometheus-operator/blob/master/Documentation/user-guides/getting-started.md

to get one custom operator running pointing to my application pod that
exposes prometheus endpoint so far to no avail.

If you had done this, I would love to connect with you.
