Thanks for the pointer to 'ngrep'. I installed the ngrep RPM from here (I'm on Centos 5): http://dag.wieers.com/rpm/packages/ngrep/
Then I ran: ngrep -W byline -td any . port 5060 Which showed me exactly what I was looking for.
