log_stderror=yes
fork=no
This will write the messages straight to your console, so you can easily
spot any errors, fix & restart until everything is fine. :)

(the udp and tcp settings are according a setting in the configuration
file)
So, all seems well until I
ps aux | grep opensips
at which I don't see any process running (apart from the grep-command
itself).
And when I execute
/etc/init.d/rsyslog restart
I get following output
"Stopping enhanced syslogd: rsyslogd.
"Starting enhanced syslogd: rsyslogd."
so all seems well albeit that there is no logfile
/var/log/opensips.log that is being logged to
Can anybody help me please?
