One of the issues is however, that I do not know all these packages.
I can tell if they build without error, and maybe even if they are
able to install, but other testing than that should be done by a user

httpd
postfix/mysql/spammassasin/clamav/amavis-new/roundcube
The later would be somewhat dangerous to test, as I do not have a test
system, only the production one!
I left out that I am building a SAMBA/masqdns/httpd server and undecided
on RSEL6 or F21. If you provided SAMBA 4, it would make a difference.
Samba 4 was FTBFS on ARM when I tried. What feature do you need that
Samba 4 provides and Samba 3 doesn't?
Active Directory. My reading of the Samba Wiki is that Samba4 is the
basis for AD with LDAP integration. Don't know yet IF I am going with
AD or staying with my NTDomain setup.
I don't use AD, but I have been using Samba 3 with LDAP authentication
for years. Are you sure Samba 3 won't do what you want?
