I've changed the log level to 1 and I still get the blank page and the
errors in Apache's log file.
I've also tried rm'ing the whole lot and re-downloading but I still get
the error.
Could I have missed some config setting that would give me this error?

I got the same thing, but not having the time to fix the source of the
problem I went ahead and changed the debug level in config (IIRC it's
the first line or two) to 1 instead of the default 5 (which isn't even
listed as being an option in the comment). So far it works just fine
and doesn't show those errors and they don't seem to noticably affect
usability.
Oh yeah - I did some investigation and it's possibly related to some
cache table write not having a closing single quote. So maybe I'm not
getting full caching (cache table still gets used though), but I had
to move on to something else when I was fooling with it.

When I try and run Roundcube I get the following in my Apache error log:

I used to have Roundcube working but I decided to delete it all and
reinstall the latest version.
I get this problem with both the latest CVS and the 0.1 beta.
Could it be something to do with upgrades to php (5.1.2-1) and mysql
(5.0.18-8)?
If it helps the webserver is running on Apache/2.0.55 (Debian)
PHP/5.1.2-1 mod_ssl/2.0.55 OpenSSL/0.9.8a
