Luca,

You know, I had this issue myself and came to believe it had something to
do with my webhost.  I went through several test runs where I created and
then deleted some email accounts for use with RoundCube as I was trying it
out.  I noticed that on occasion when I created a new email address and
then installed RoundCobe soon afterwards, the only folder that would
display was just my Inbox.  This repeated for me a few times but when I
created a new email account and waited a little while (like 30 minutes) and
then ran the RoundCube installer, all my folders appeared perfectly.  Maybe
just a coincidence.

On the other hand, when I did install and only had the Inbox appear, I
went into the folders tab under settings and created a new folder, then
deleted it and suddenly I was able to "initialize" the missing default
folders by adding a check next to each one and they appeared normally when
I logged into RC after that.  Might just be me, but it's been my experience
so far during testing.
