If you are using maven 1.0.2, in the changelog screen [1] you can see all changes from maven 1.1 beta 1 to maven 1.1 final. Be careful, this one doesn't include changes in plugins bundled in the distribution. You can find the list of plugin changed between these 2 releases in the following table [2]. You need to have a look at each plugin to have the complete list of changes.
