2.0, even before RC, is stable enough for use. We've been using Mina 2.0 milestones for some time in our released product, and haven't had any problems. I would highly recommend going with 2.0, especially with the RC releases fairly imminent. There's a fairly large push on the dev list to phase out the 1.0 information on the website as well, since the focus will be on 2.0.
