OK. I have managed to render my data using OpenLayers.Layer.WFS() but
according to [1] this is deprecated, so I'd really appreciate any hints to
get the Vector() route working.

    var wfslayer = new OpenLayers.Layer.WFS("WFS",
        "http://d2.elgin.gov.uk/geoserver.3/wfs";,
        { typeName: "e:NSG_STREET_PUBLIC" },
        {
            typename: "NSG_STREET_PUBLIC",
            featureNS: "http://www.elgin.gov.uk/";,
            extractAttributes: true,
            srsName: "EPSG:27700"
        }
    ); 
    map.addLayer(wfslayer);
