The icon that you see displayed for an .ods file in your operating system's file display is not "in" the .ods file (as your Subject header claims). Instead, document file types are usually "associated" in your operating system with a particular application - so that files of that type will be opened by default in that application when double-clicked outside any application. The icon you see is that for the application. So the icon you see for .ods files will be that of scalc.exe, the program (in your apparent Windows 10) that is invoked by double-clicking an .ods file. The icon itself is within that file, not in the .ods file.
Yes, you can change this icon (though it may be confusing to do so). If you right-click your icon for OpenOffice Calc (the program, not any document), you should see a Change Icon... button. From there you will have to browse to a file containing suitable icons. Perhaps more easily, there will be a Tools | Folder Options... option in your system's file explorer (whatever Windows 10 calls this), and this should have an Advanced option which will enable you to change the icon for the ODS file type. This technique will, I think, display all the icons that are available in soffice.exe but will also allow you to browse elsewhere to find other icons.
What you can see from all this is that the icon that is displayed for any type of document file depends on the arrangements on your system and not on anything in the file itself. The obvious consequence of this is that you have no control over the icon that appears on a remote system if you transmit your document file to someone else - whether your system displays the default icon or any alternative. On the remote system, the icon displayed will be that for whatever application your correspondent has chosen to open such files by default.
