I'm not sure this exactly matches your description of what happens, but is it possible that you've pressed the Insert key on your keyboard? That changes you from the usual Insert mode to the Overwrite mode. The shape of the mouse cursor changes and the word 'Overwrite' appears at the bottom of the Writer window. Pressing the Insert key again returns you to the Insert mode.

When I try to edit a word in a text document the cursor highlights an
adjacent letter and if mouse is pressed deletes the letter. This just
happened and I can't seem to find how to fix it. Thanks
