The way that I've seen this function used is if the instructions are actually typed into the field labelled as 'placeholder'. This then is displayed on the screen as:
<this is the instruction that appears on the screen> The user then double clicks on this and a screen is opened on which these instructions can be overwirtten (into the 'placeholder' field).
