Rod & Naomi, thanks a heap for the solutions! Would you believe I overlooked the Page Styles menu because my previous Mac "Nisus Write" and "Mariner Write" experience always saw that option as a simple menu feature instead of a NASA control panel? OpenOffice is kind of like a mountain of overwhelming options and sometimes you can't see the forest for the trees seeking a "simple" solution!

There's an outstanding RFE for that. In the meantime, you can adjust the total page count by inserting a Formula instead.
Do Insert -> Other -> Formula. Then type page - 1 (or whatever offset you need) in the box at the bottom. The variable "page" holds the total page count. It's sort of non-intuitive the way it's named and not at all documented, but it works.

It's Friday arvo here James, so apologies if this is a brainless response :)
WHY do you want to blank out page number and page count? If it's because of a title page or other special page of some sort... create different page styles, one with numbering in the header, one without. Then when you need to change from one page style to another, insert a manual page break. See 'page styles' in the OOo manual.
