Configure your email client to do this for you.
If you are talking about encrypting a document, that is done when you first save the file or later do a "Save As". "Save with Password" is one of the choices available in the "Save" window. Make sure it is clicked, and enter the password information. To test this, close your document and then reopen it. You should be asked for a password. If so, your document has been encrypted.
