I would strongly recommend that you read
OpenOffice.org-1.1x_user_guide.pdf (downloadable from OOo site)
Chapter 4, starting on page 200 deals with Charts.
If it is as clear as the first 200 pages I've just finished reading you
will certainly find what you're looking for!
